Future Food Processing

The Future Food Processing stream will develop more innovative approaches in food processing technologies with an aim to transform nutrition delivery; maximise food safety, quality and nutritional integrity; and repurpose high value waste. By collaborating with the Food for Health and Food-omics stream, this stream will be able to trace and measure food products’ micro-structural transformations as they move through the process chain. Along with this multi-scale, computational modelling will be used to identify and quantify value in ‘waste’ streams, with the purpose of creating closed loop logistics.

This stream will accelerate ‘cradle to grave’ life cycle assessments for food processing systems and thus maximise nutritional delivery and integrity; sustainability and cost reduction for the agrifood industry. This will be enabled by an advanced, multiscale pilot plant that will facility in-house development and prototyping of new technologies and processes.
