Thesis title: Understanding consumer purchasing behaviour: a pathway to healthier, kinder food choices

Thesis abstract:

Global population growth and rising consumption of meat and dairy are forcing the world to face the intersecting challenges of how to feed a population expected to exceed 9 billion by 2050, while controlling the impact of food production on the planet, people and animals. The production of food from animals has become increasingly intensive, posing many ethical challenges for consumers and producers alike. The current project will explore the factors that influence Australian consumer attitudes towards welfare-friendly purchasing and compare it to purchasing behaviour itself to expose any disparity between attitudes and actual purchasing behaviour, known as the attitude-behaviour gap. In partnership with a major Australian food retailer, the project will develop an animal welfare food rating system that rates the animal welfare impact of animal-derived foods (pork, poultry, and eggs). The project will investigate whether exposure to the rating system has an effect on the extent of the apparent gap.
